The tiger nut (Cyperus esculentus) has all kinds of special features. Although the plant belongs to the sour grasses, tigernuts naturally taste sweet and nutty. The grass forms small thickenings, about the size of an almond, on its rootstock. Thus, the tiger nut, also known as tiger almond or chufa, is not an almond at all.
