Inulin is a prebiotic, natural and slightly sweet-tasting dietary fiber from chicory root that can serve as a source of food for the beneficial intestinal inhabitants. Unlike starch, however, inulin is a dietary fiber that is not broken down in the small intestine because humans lack the necessary enzymes. It can therefore reach the large intestine almost unchanged. The mixture of inulin and apple fiber is suitable as a drink or as an addition to fruit juices, but is also excellent for baking and can be added to flour at a rate of around 10%.
