Porridge is enjoyed in many different variations in many countries and cultures. However, porridge originally comes from Scotland. In the rugged Highlands, a warming porridge was just the thing for breakfast, and in working-class families it was also served as a filling meal for lunch or dinner. It was customary to add only a pinch of salt to the porridge itself – nothing else. The oats were boiled in water and stirred with a wooden stick, called a spurtle, until a creamy, grainy porridge was achieved. Cold milk, cream, or buttermilk would then be waiting on the table, into which the spoonful of porridge could be dipped as desired.

Unlike their English neighbors, the Scots didn't sweeten their porridge—a little brown sugar was added only for children. Even today, porridge is usually served plain in Scotland. Separate ingredients are added for sweetening and refining, such as maple syrup, cream, jam, compote, fresh fruit, or even—in true Scottish fashion—a splash of whiskey. In addition to sweet versions, the Scots also enjoy serving their porridge savory. The variety of options means there's something for every taste.

Spielberger Mühle uses only select, high-quality oats for its porridge flakes. The unhulled oats are carefully dried in the flake mill to allow them to develop their wonderfully nutty flavor. The kernels are then hulled from the oat husk and rolled into flakes of various sizes and tenderness. The select blend of large-leaf, small-leaf, tender-leaf, and finely ground oats results in a creamy, hearty porridge—true to Scottish tradition.

Preparation:
Boil 200 ml of water, milk, or plant-based drink and stir in 65 g (4 tbsp) of oat porridge flakes and a pinch of salt. Turn off the stovetop and continue stirring the porridge for about 1 minute. Pour the porridge into a deep plate or bowl. Sweeten to taste.

Tip:
Refine your porridge with a dash of cream, some fruit or a crunchy topping, e.g. a mixture of Spielberger pumpkin seeds, sunflower seeds and sesame seeds.
