Modern nutritional physiology rates cabbage as an extraordinarily healthy food, since when used as a staple food it provides a variety of conventional nutrients such as in particular fiber (2.5%), protein (1.4%), potassium, vitamin C (150mg/100g in kale) and vitamin folic acid (187ug/100g in kale and 90ug/100g in savoy cabbage) as well as vitamin K (70ug and 817ug/100g in white cabbage and kale (according to the Federal Food Key)) in nutritionally significant quantities.
Vitamin K intake (important for bones and blood clotting) is particularly important, as few foods are good sources of vitamin K, and most Central Europeans are under-ingested due to their low consumption of green vegetables. The EU-specified daily requirement of 55µg of vitamin K can therefore be met with just about 7g of kale.
