The trace element selenium functions as a cofactor for various selenoproteins and is involved in a large number of metabolic reactions. As part of the active center of selenoproteins, selenium is necessary, among other things, for the function of the enzyme glutathione peroxidase 6. Selenium sits in the central position of the enzyme molecule and plays a central role in the elimination of cell-damaging compounds. This antioxidant protective enzyme is particularly active in the thyroid gland. If the activity of glutathione peroxidase is reduced, undesired radicals are only insufficiently intercepted and can attack and damage cell membranes 7 .
The body cannot produce selenium itself, so it needs to be adequately absorbed through food. The selenium content of plant and animal foods varies depending on the selenium content of the soil. In parts of Central and Northern Europe, the soils are rather poor in selenium, so that plant-based foods can only contain low levels8. Selenium-rich foods are z. B. marine fish, meat, offal and Brazil nuts.
