Vanilla is a creeper grown in Madagascar, Reunion and Comoros; the vanilla spice is obtained from their fermented capsule fruits. The flower of the vanilla plant is built in such a way that it can only be pollinated by hummingbirds and certain insects. So one is dependent on artificial insemination with a brush. When fresh, the vanilla fruit is odorless; the dark color and the scent of the so-called vanilla pod are only created through a careful fermentation process. Vanilla is used as a spice, especially to flavor chocolate and cocoa.
