Choline is found in the body as a component of the messenger substance acetylcholine, lecithins (phosphatidylcholines), and also as an intermediate product of metabolism. In food, choline is found in large quantities in egg yolks, liver, wheat germ, and soybeans, mostly as a component of lecithin.

Choline can also be synthesized in the liver and kidneys of the human organism, as long as the amino acids methionine and folic acid are present in sufficient quantities. If an acetyl residue is transferred to choline in the body, the important neurotransmitter acetylcholine is produced. Acetylcholine mediates the transmission of excitation between nerve and muscle, it is an important transmitter in the central nervous system, and acts as a messenger substance in many cognitive processes.
