A large part of our immune system (70% of all immune cells) is located in our small and large intestines, the so-called intestinal immune system. On the one hand, the intestinal flora is a real antigen reservoir and on the other hand, it is here that numerous valuable nutrients, as well as vitamins and minerals, are absorbed from food that are needed for a functioning immune system. In order for these to be used optimally, countless enzymes are needed that can transport these substances through the intestinal wall, the enterocytes, convert them or transform them into an active form. Only then can the individual building blocks be transported via the blood to the required organs and tissues and perform their function there.
There are specialised enzymes for every food component. Amylases, for example, are responsible for the decomposition of carbohydrates into monosaccharides. Protein, on the other hand, is broken down into individual amino acids by trypsin and chymotrypsin. Enzymes contribute to optimal digestion, which relieves the digestive system and allows the body to send its energy to other systems. The enzymes mentioned are also found in a wide variety of foods. It is important to note that they begin to decompose when heated to over 40 degrees and are thus destroyed.
The intestinal flora, which consists of over 100 trillion bacteria in a healthy intestine, also plays an important role in the immune system. The number of these bacteria decreases with each year of life, and the intake of antibiotics in particular has a negative effect on the intestinal flora. Dietary fiber, such as inulin, supports the intestinal flora in two different ways. On the one hand, they serve as food for the healthy intestinal flora and thus have a positive effect on its reproduction. On the other hand, they are fermented in the large intestine to form short-chain fatty acids, which lower the pH value in the large intestine, thereby increasing the solubility of many minerals and vitamins and allowing them to be better absorbed through the intestinal wall. Inulin can be found in foods such as Jerusalem artichokes, chicory, onions and artichokes.
