Maca is a vegetable that grows in extremely high mountain conditions in the Andes and is particularly valued by the local population. Cultivation is only possible at an altitude of between 3,500 and 5,000 m above sea level. The Maca plant (Lepidium meyenii Walp) has been cultivated since around 700 BC. Cultivated in Peru and is one of the oldest natural products there. This tuber is still a staple food for the Peruvians. The Incas also used it as a staple food for centuries. Today, however, it was pushed aside by the potato.
