Spirulina, a spiral microalgae, is classified as Cyanobacteria, also known as blue algae. The oldest sedimentary rocks containing fossils indicate that cyanobacteria appeared 3.5 billion years ago, the first green organisms on an uninhabited, undeveloped Earth. Their evolutionary achievement was the possession of chlorophyll, which was used for photosynthesis—the synthesis of organic compounds and the production of oxygen. The same chlorophyll found in primary algae is present in all green plants to this day. Solar energy is harnessed not only by chlorophyll but also by other pigments, such as beta-carotene, which is valuable for health, and phycocyanin, which is interesting from a pharmaceutical perspective. Spirulina has an exceptionally high content of this pigment. Spirulina is often referred to as a highly nutritious superfood. No other food product, whether plant or animal, contains such a high protein content and a complete set of nutrients.
